The MIYABI series is owned by a globally known kitchenware brand Zwilling J.A. Henckels. When Japanese traditional swordsmanship and German state-of-art technology combine, these bring about the creation of high-quality kitchen knives. This is the Damascus steel sujihiki knife.
Sujihiki knife, which is literally translated as ?grain slicer?, is a Japanese carving knife. Its long and thin blade makes it perfect for removing tendons from gristly meat. If you often need to cut and slice a chunk of meat, this is the one for you.
The blade is made with stainless steel called FC61, and it is processed through the manufacturer?s original quenching called FRIODUR?. This technology significantly increases the blade?s hardness and lifespan.
You can also use this product as a sashimi knife; just like the meat, cut the fish across its tendons. The knife?s asymmetrical handle also supports precise cutting.
